Recipe: Greek Salmon

- 2 lemons
- 4 6-ounce salmon fillets
- 1 tsp salt
- 2 tbsp chopped fresh dill
- 1 tsp dried oregano
- 1 cup chopped tomatoes
- 2 shallots, finely chopped
- 1/2 cup pitted Kalamata olives, halved
Instructions

Preheat the oven to 425 F. Cut most of the lemon into 1/2-inch thick slices and arrange in a single layer in a baking dish, reserving one end of the lemon to squeeze over the salmon.

Place the salmon skin-side down on top of the lemon slices. Season with the salt, dill, and oregano and then top with the tomatoes, shallot, and olives.

Bake until the salmon is opaque and flakes easily, 12-15 minutes. Squeeze lemon juice on top before serving.
