Recipe: The Lazy Gal's Ground Beef & Broccoli

- 1 lb ground beef
- 2 cups broccoli florets
- 1 medium onion, thinly sliced (optional)
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1 tablespoon cornstarch or arrowroot
- 1/2 cup water
- 2 tablespoons extra-virgin oil
- Salt and pepper, to taste
- Cooked white rice, for serving (I love the microwave pouches to save time)
Instructions:

Brown the Ground Beef: Heat oil in a large skillet over medium-high heat. Add the ground beef and cook until browned.

Add Aromatics: Add the minced garlic and sliced onion to the skillet. Sauté until fragrant.

Steam Broccoli: Add the broccoli to the skillet. Cover and cook for 3-4 minutes, allowing the broccoli to steam and soften slightly.

Prepare the Sauce: In a small bowl, whisk together soy sauce, cornstarch, and water. Pour the sauce over the beef and broccoli mixture. Stir well to coat.

Simmer and Thicken: Reduce the heat to medium-low. Cover the skillet and let it simmer for 5-7 minutes, or until the broccoli is tender-crisp.

Adjust Seasoning: Taste and season with salt and pepper as desired. Serve the Ground Beef & Broccoli over cooked white rice.
Notes:
- Feel free to add red pepper flakes or chili sauce for some extra heat.
- Garnish with sliced green onions or sesame seeds for a pop of color.
